Here’s how to do it:

Click on your profile or name.
Select 'Settings & Privacy'.
Select 'Data Privacy'.
Select 'Get a copy of your data'.
Choose how to export your data.
From the drop-down options, select 'Connections'.
Click 'Request archive'.
Check your email for the data you requested. From there, you can see who unconnected you on LinkedIn.
